One of Summers Best Finds - the Orange Day Lilly

My wife tries all sorts of things to keep the deer from eating her flowers and so she was slightly mad when we started eating her day lillies. The little "green bean" like flower buds are the best. The flowers and buds can be eaten raw though a little sour and buds are somewhat slimy. Dip them in egg whites or a little melted butter and cook them ever so slightly and they are an excellent tasting "green bean." Add salt and pepper just before taking out of frying pan. The flower heads can be dipped in egg whites and eaten as fritters. 3 of us ate a bowl full and I wish I picked more.

Most if lilly's are editable though I will state to make sure before you eat. The orange day lilly is definitely safe. The spotted lilly as seen in the last photo is not edible and are poisonous. The one in my hand was found in North Carolina.
